1 lb. butter or Imperial margarine or 1/2 of each
1 lb. light brown sugar
1 lb. white sugar
1 tsp. vanilla
4 c. flour

Separate eggs and beat egg whites. Cream butter, sugar and egg yolks together. Add flour and mix thoroughly (dough will be stiff). Mix in beaten egg whites thoroughly. (This should be right consistency to spoon onto gallet iron.) When dough is dropped on iron it does not spread.

1. No liquid is used. After testing 1 or 2 cookies and the dough seems too thin, add flour gradually until right consistency is obtained.
2. If using iron for electric stove: Temperature is medium high. Cook galette for 30 seconds on each side. When done, they fall out of iron. If using an electric galette iron, follow appliance directions. It should take about 1 to 1 1/2 minutes each.
3. If dough sticks, clean iron well and add oil to re-season. Never clean with water.
