1/2 C hot water
1/4 C butter

1/2 tsp sugar
1/2 C plus 1 T flour
2 eggs

Directions:
Directions:
Into a saucepan pour 1/2 C hot water over 1/4 C butter and stir until butter is melted. Add pinch of salt, 1/2 tsp sugar and bring to rapid boil. Add all at once 1/2 C plus 1 T flour, raise saucepan above heat and stir vigorously with a wooden spoon until the paste comes away from the sides of the pan and forms a smooth ball in center. Remove from fire and add 2 eggs, one at a time, beating vigorously after each addition until thick and glossy. Onto buttered sheet drop paste from tsp in little mounds the size of half a walnut or drop 6 larger sized portions. Bake 400 for 10 min then 300 for 15-20 minutes Fill with pate de foie gras or any filling.
