⅔ c. self-rising buckwheat flour
⅓ c. self-rising flour
1 c. milk
1 c. water
⅓ tsp. salt
1 tbsp. vinegar

Stir together all ingredients. Mixture should be thin. Fry in greased skillet until brown on both sides.

Killing hogs, buckwheat pancakes, and fried apple pies were a Thanksgiving Day tradition. For years, Papaw Bert slaughtered hogs while Mamaw Beulah served up buckwheat pancakes with tenderloin and clear gravy for lunch. Aunt Jessie, Hal, Guyn, Eva, Rick, Lamon, Carol, Teresa, and Julie would be there to eat, help make fried apple pies, and work sausage. The traditional Thanksgiving dinner with turkey and dressing was always on the Sunday following Thanksgiving Day.
