.2 Qts. Figs
.6 cups sugar
.1-1/2 to 2 cups of water
.1 lemon (sliced)

1,Sort Figs, using ripe figs but not cracked ones (save the cracked ones for jelly). Cut off the end stems, wash, and drain.
2. Make a heavy syrup of water and sugar in a large pot. Stir and heat slowly until the sugar is dissolved.
3. Increase heat and bring to a boil for 3-4 minutes. Add the sliced lemons and figs. Cook over medium heat (a good, but gentle boil) until liquid becomes clear and transparent (about 1-1/2 to 2 hours).
4. Do not stir, but rather lift gently from the bottom during cooking time.
5. Fill hot, sterilized jars with boiling figs and syrup to within 1/4 inch from top. Wipe sealing edge clean and seal.
6. Process in boiling hot water bath for 5 - 10 minutes.
7. Remove from water and set on paper towels to cool and set. Check seals before storing.

Note: Figs freeze really well. So if using frozen figs, place in pot, add sugar and water to heat slowly until the figs thaw. Add the sliced lemon, bring to a boil, and cook as above directions.

I watched my mom (Vivian) cook and can countless jars of figs while growing up. As a young child, I can still remember eating figs on buttered toast while washing it down with coffee.
