1 lb lean ground beef
1 T oil
1 clove garlic, minced
1 large can diced or whole tomatoes
1 T parsley
1 T basil
1 t salt
6 oz tomato paste

1 10 oz package lasagne noodles cooked or 1/2 package of oven ready lasagne noodles

12 oz small curd cottage cheese
2 beaten eggs
2 T parsley
2 t salt
1/2 cup fresh Parmesan cheese
1/2 t pepper

8 oz shredded mozzarella cheese

Directions:
Brown meat in oil until browned. Add next 6 ingredients and cook until fragrant and thick. About 1 hour.

Combine cottage cheese, eggs, 2 T parsley, 2 t salt, Parmesan cheese, and pepper in separate bowl.

Assemble by spreading a small amount of sauce in approx 8 x 11 pan, 1/2 of the noodles, 1/2 of the cottage cheese mixture, 1/2 of the mozzarella, then 1/2 of the remaining sauce. Repeat. Sprinkle with more Parmesan and cook for 30 min in 375 oven, covered with foil. Remove foil and cook an additional 5 min until the Parmesan cheese is melted. Let sit for about 15 min before serving.
