1 1/4 cups canned chickpeas, (dried with paper towel)
1/2 cup heaping peanut butter
2 teaspoons vanilla
1/4 cup honey
2 tablespoons olive oil
1 teaspoons baking powder
1/4 teaspoon salt
2/3 cup dark chocolate chips

Directions:

1. Preheat oven to 350º. Grease cookie sheet.
2. Measure out and dry chickpeas with paper towel.
3. Puree in a food processor fitted with a steel blade. Scrape down the edges and pulse again a few times until the dough is completely smooth.
4. Add all the remaining ingredients (except the chips. Puree
5. Pour the cookie dough into a bowl and add in the chocolate chips. The dough will be sticky.
6. Scoop out heaping spoonfuls and drop them on cookie sheet.
7. Bake for about 13 minutes. Eat warm or cold.
