4 large baking potatoes
½ cup butter
½ cup all purpose flour
2 cups milk
2 cups half & half
2 cups chicken broth
¾ tsp salt
½ tsp pepper
4 green onions, chopped and divided
12 slices bacon, cooked, crumbled and divided
1¼ cups (5 ounces) shredded cheddar cheese, divided

Wash potatoes and bake at 400 degrees for 1 hr. Let cool. Cut potatoes in half lengthwise and scoop out potato. ( or peel and cube potatoes and boil until tender).
Melt butter in heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk and broth. Cook over medium heat until mixture is thick and bubbly.
Add potatoes, salt, pepper and 2 T green onions, ½ cup bacon, and 1 cup cheese. Cook until thoroughly heated. Add extra milk if needed for desired thickness. Serve with remaining onion, bacon and cheese.
