oil
1 medium onion, chopped
3 cloves garlic, peeled and diced, or more to taste
1 medium potato per person, unpeeled and cut into small dice
2-3 lamb chops per person
fresh or dried rosemary to taste, crushed (start with 1 teaspoon)
2 small tomatoes per person, chopped
salt and pepper to taste

Preheat oven to 350 F.

In a baking pan, saute the onions in the oil until translucent. Add the garlic and continue cooking until garlic is fragrant. Add the potatoes and season with salt and pepper. Mix and cook until potatoes begin to brown. Remove pan from heat and layer the lamb chops on the potato mixture. Add rosemary. Spoon some of the mixture over the lamb chops. Loosely cover with foil and cook on the middle rack for 25 minutes.

Turn off the oven and remove the pan. Turn the broiler on. Remove foil and spread tomatoes over all. Cook five minutes more, uncovered, under the broiler.
