1½ Cups Flour
½ tsp. Baking Soda
½ tsp. Baking Powder
½ tsp. Salt
3 Eggs, room temperature
1 Cup Sugar
2 Tbsp. Butter, softened
1 tsp. Vanilla
1 tsp. Lemon Extract
⅓ Cup Lemon Juice
½ Cup Oil
1 Cup Powdered Sugar
1 Tbsp. Powdered Sugar
2 Tbsp. Milk
½ tsp. Lemon Extract

Directions:
Directions:
Preheat oven to 350º. Grease and flour 9 x 5 loaf pan. In a large bowl combine flour, baking soda, baking powder and salt. In a medium bowl, combine eggs, sugar, butter, vanilla and lemon extracts and lemon juice with a mixer until blended. Pour wet ingredients into the dry ingredients and blend until smooth. Add oil and mix well. Pour into loaf pan and bake for 45 minutes or until toothpick comes out clean. Remove from oven and cool in pan on a rack.

Icing: In a small bowl, combine powdered sugar, milk and lemon extract with a mixer until smooth.
When loaf is cool, remove from pan and frost top with icing. When icing is set, you may slice the loaf.
