1 29oz. can black beans, rinsed and drained
1 6oz. can tomato paste
1 32oz. can vegetable stock
1 onion, chopped
5 cloves garlic, minced
1 tbls mild chili powder
1 tbls cumin
1 tsp oregano
1 tbls olive oil
1 sweet potato, peeled and cut into bite sized chunks
1 cup dry quinoa
Salt and pepper to taste
Avocado & cilantro/coriander and a dollop of Greek yogurt for garnish

Directions:

1. Heat oil in large soup pot over medium heat. Add onions, and cook until soft and start to brown. Add garlic and cook for about 2 minutes.
2. Add the tomato paste and spices and cook for about 2 more minutes, stirring constantly.
3. Add the beans, stock, and potatoes and season with salt and pepper.
4. Cook for about 5 minutes and add quinoa. Continue cooking for 15-30 minutes, stirring frequently, until quinoa and potatoes are cooked and the chili has thickened.
5. Add a bit of water if the chili becomes too thick for your liking. Top with avocado, Greek yogurt and chopped cilantro.
