"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
8 1/2 cups water
2 1/4 to 2 1/2 vinegar( I have been doing in between)
1/2 cup Kosher salt
Fresh Dill
Dill Seed
1 tsp Crushed Red Pepper
1/2 Serrano Pepper
1 Garlic Clove

Directions:
Directions:
For pint size jars:
1 Sprig of fresh Dill and 1 Tsp of Dill Seed

For quart size jars:
2 Sprigs of fresh dill and 2 tsp of Dill seed
(I used a whole serrano pepper for the quart and 2 cloves of garlic) I only used 1 tsp of crushed red pepper on either size jar.

Bring the water, vinegar and salt to a rolling boil. Once it boils pour over the cucumbers, etc in the jar. Put the lid on and turn upside down. You don't have to do the water bath since they are being done with boiling water. This will seal the jars for you.

Personal Notes:
Personal Notes:
We have managed to eat a jar a day so fair warning. We have been using the cucumbers from our garden that is producing faster than we can eat.

I hope you enjoy. They are super easy to make.
