2 lbs. ground beef
½ small onion, chopped
1 tsp. salt
1 tsp. pepper
2 small cans red enchilada sauce
1 pkg. shredded cheddar cheese
1 pkg. large flour tortilla shells
1 can chili beans, drain the top off

Directions:

Preheat oven 350º

Line a LG. cookie sheet with aluminum foil.
Pour half a can of enchilada sauce onto prepared cookie sheet and spread out. Set aside.

In LG. skillet brown the ground beef with the chopped onion, salt and pepper. Remove from heat and drain off the fat.

Stir into the cooked ground beef 1 can of enchilada sauce, half pkg. shredded cheese, and the can of chili beans. Mix well until cheese is melted.

Using a plate, place 1 flour tortilla on plate and spoon at least 2 TBSP of beef mixture down the middle of tortilla. Roll tortilla up and place onto the enchilada sauce covered cookie sheet seam side down.
Continue to fill tortilla shells and line up on cookie sheet

Pour remaining half of enchilada sauce over the tops of rolled tortilla shells, sprinkle remaining cheese over the top as well.

Bake at 350º for 20 min or until cheese is melted.

Serve with sour cream.
