1 1/2 sticks of butter
1 cup milk
1/2 cup heavy cream
1 cup sugar
1 cup light brown sugar, packed
1 cup pecans (coarsely chopped)
2 cups pecan halves
2 Tbsps. vanilla
semi sweet chocolate chips (optional)

Directions:
Melt butter in a deep pot. Add milk, cream, chopped pecans and sugars. Whisk constantly over high heat for 5 minutes (if there is excessive smoking - reduce heat) Stir in pecan halves. Lower heat to medium and continue to whisk until done (8 to 10 minutes) To be sure the mixture is done, use a candy thermometer. When the temperature reaches 240 degrees (between soft and hard boil stages) the mixture should be done. Stir in vanilla. ( if using chocolate chips - drop 1/4 cup chocolate chips on about 1/6 of the batter and scooop out that section of the batter using 2 spoons.) Use one spoon to scoop the batter the other to scrape the batter from the spoon onto a sheet of wax paper. Repeat the procedure.
