Ingredients:  
Ingredients:  
2-3 large cucumbers, sliced
(can be peeled or not,
or peeled in "strips" so they're part
peeled and part not;
if not peeled, can run a fork down the
length to make a pretty design)
1 large onion, sliced into rings

Dressing:
1 cup apple cider vinegar
1 1/2 cups water
1 tsp salt
1/8 tsp pepper
1/2 cup sugar or comparable artificial sweetener
dill (optional and to taste)

Directions:
Directions:
Slice cucumbers and onions.
Mix up dressing and pour over the cucumbers and onions.
Let sit a couple hours for the flavor to blend.

The dill adds a nice "fresh" flavor to the salad. We never put it in when I was growing up, but I have fresh dill in my garden and tried it and it's very good.
