4 chicken breasts

1/4 cup olive oil

2 Tbsp chopped shallots or 1 Tbsp minced garlic clove

1/2 C tomato paste

1 C dry white wine (cooking wine or sherry works well too)

1 tsp salt

1/2 tsp white pepper – use black if you don’t have it.

1 1/2 C chicken broth

1 bay leaf

1/4 tsp thyme

1 tsp basil

1/4 tsp marjoram

1 C sliced mushrooms – optional

Directions:
Directions:
Pat dry chicken breasts with paper towels

Dredge with flour

Saute until golden brown in 1/4 cup of olive oil (Sometimes you may need more) with 2 TBL chopped shallots, or 1 minced garlic clove

Add remaining ingredients

Simmer all, covered, for 1 hour.

Serve with pasta – enjoy!
