1 pkg yeast
3.5 c flour
1 tsp salt
4 tsp sugar
1 3/8 c water

1. Combine 1/4 c water, yeast and 1 tsp sugar into a bowl,
2. Allow to stand for 5 minutes until yeast is bubbly.
3. Add in 1 tbsp sugar, salt and water.
4. Mix well.
5. Add flour.
6. Knead with dough hook 5 min
7. Allow to raise until double, about 20 minutes.
8. Roll out the dough flat, then roll up jelly roll style. Cover your cookie sheet with a silicone mat.
9. Cut slits into the dough (not all the way).
10. Preheat oven to 300 degrees.
11. Heat a pan of water to boil on stove top.
12. Turn off oven, put pan of boiling water on the bottom of the oven,
13. Give the bread a egg white wash (1 egg white and 1 tsp of water) put the loaf of bread on the top shelf.
14. Let rise for 20 minutes
15. Set oven to 425, while the bread is still in the oven, bake for 10 minutes, then turn down heat to 375, bake for another 6-8 minutes.
