4 TBSP. butter
2 cups onions, thinly sliced
5 cups beef broth
½ cup Swiss cheese
½ cup mozzarella cheese
3 TBSP. Parmesan cheese, grated
2 TBSP. flour
½ tsp. paprika
¼ tsp. thyme
⅛ tsp. pepper
French Bread

Cut 8 slices of bread ½-inch thick. Place in oven for 30 minutes at 250º while soup is cooking. Cool. Melt butter. Add thinly sliced onions and stir over medium heat until onions are light brown. Stir in paprika, pepper, thyme and flour. Add broth and boil. Reduce heat to simmer for 30 minutes. Preheat oven to broil. Ladle hot soup in 5-8 oven safe soup bowls leaving room on top for bread. Cube cut cooled bread. Place on top of soup. Mix the three cheeses together and sprinkle over the bread on each soup bowl. Place soup bowls on a tray and place under broiler ntil cheeses are bubbly and slightly browned. Serve with another loaf of french bread for dipping.
