1 TBSP. butter, melted
1 cup 2% milk
1 egg
1½ cups fresh Raspberries
½ tsp. lemon zest
2 cups flour
¼ + 2 TBSP. sugar, divided
1 TBSP. baking powder
½ tsp. salt
1 cup white chocolate baking chips

Directions:
Directions:
In medium size bowl, whisk egg, butter, milk, and lemon zest until combined. In a separate bowl, mix flour, ¼ cup sugar, salt and baking powder. Combine wet and dry ingredients together. Gently stir in the raspberries and white chocolate chips. Spray muffin pans or use liners. Divide the batter evenly between 12 cups. Sprinkle with 2 TBSP. sugar. Bake for 15 minutes at 400º.
