3 eggs, separated
1/2 cup flour
1 1/4 cups sugar
1 3/4 cups water
1/4 cup lemon juice
2 tablespoons grated rind
1 1/2 tablespoons butter

Directions:
Directions:
Stir flour and sugar together; add water and butter and cook until thickened. Beat out all lumps. Now add lemon juice and grated rind and beat again. Remove from heat, stir in well beaten egg yolks. Return to heat and cook again until smooth, only 3 to 4 minutes. Cool and turn into a baked crust.

Top with meringue made with 3 egg whites and 6 tablespoons sugar. Beat egg whites until stiff but not dry. Beat into them two thirds of the sugar (4 tablespoons) until mixture stands in peaks, then carefully fold the remaining 2 tablespoons sugar through.

Pile onto pie, pulling over the edges to seal. Bake in moderate oven, 375 degrees, 10 to 12 minutes.
