3.5 lb spaghetti squash
1 T olive oil, divided
2 slices bacon, chopped
1 lb chicken breast, cut into bite size pieces
1 t kosher salt, divided
1/2 t freshly ground pepper, divided
1 c chopped onion
3 garlic cloves, minced
8 oz mushrooms, sliced
1 t Italian seasoning
1/2 c dry white wine
2 T tomato paste
1/4 c sun dried tomatoes, packed without oil, julienned
1 1/4 c fat-free, less-sodium chicken broth
6 oz fresh spinach, chopped
1/2 c grated Parmesan cheese, grated, divided

Preheat oven to 400 degrees.
Cut squash in half lengthwise; discard seeds. Place squash halves cut side down in a 13X9" baking dish. Add water to measure 1/2" deep. Bake at 400 degrees for 45 min. Turn squash over; bake an additional 15 min or until tender; cool. Scrape inside of a squash with a forkto remove strands to measure 6 cups. Keep warm.
Heat 1 1/2 t oil in a large non-stick skillet over medium heat. Add bacon to pan; cook until crisp. Remove bacon from pan. Cool and crumble. Increase heat to medium-high; sprinkle chicken evenly with 1/2 t salt and 1/4 t pepper. Add chicken to drippings in pan and cook 4 in; remove from pan.
Heat remaining 1 1/2 t oil over medium high heat. Add onion o pan and cook 3 min or until soft, stirring frequently. Add remaining 1/2 t salt, 1/4 t pepper, reserved bacon, garlic and Italian seasoning to pan; cook 1 min. Stir in mushrooms and cook 4 minutes or until softened, stirring occasionally. Add wine to pan and cook 3 min or until liquid evaporates, stirring occasionally. Add tomoator paste and cook 1 min stirring constantly. AAdd reserved chicken, chicken borth, tomatores and spinach to pan. Cook 2 min or until spinach wilts, stirring constantly. Stir in 1/4 c cheese.
Place about 1 c of squash on each of 6 plates; top each serving with about 1 c chicken misture and 2 t remaining cheese.
