2 15 oz cans black beans, rinsed and drained
3 ears freshh cooked corn, kernels cut off the cob
2 red bell peppers, diced
2-3 green onions, chopped
2 cloves garlic, minced
1/2 t salt
1/4 t cayenne pepper (optional)
1 T sugar
6 T extra virgin olive oil
1 t lime zest (be sure to zest limes before juicing)
6 T fresh lime juice
1/2 c chopped fresh cilantro, plus more for garnish
2 Haas avocados, chopped

Directions:
Directions:
Mix first 4 ingredients in large bowl. Mix remaining ingredients (except avocado and cilantro for garnish) in small bowl. Pour dressing mixture over vegetables and stir. Allow to marinate in refrigerator for at least 30 min (the longer the better). Add cut up avocado and serve.
Tastes great with chips or on salad, even just with a spoon!
