Bran Muffins Recipe

2 c wheat bran
1 1/2 c dark raisins
1 1/2 c water
1/2 cup buttermilk or plain yogurt
fresh orange zest
1/2 c packed brown sugar
1/2 c vegetable oil
2 large eggs
3/4 c flour
1 t baking powder
1 t baking soda
1/2 t salt

Directions:
Directions:
1. Put the bran on a cookie sheet and toast for 6-8 minutes. Stir once in a while. Let cool.
2. Heat ONE cup of the raisins and 1/2 CUP on water. Simmer for 10 minutes or until all the water is absorbed.
3. Puree the raisins in a food processor until smooth.
4. In a large bowl, mix together the bran, yogurt, ONE CUP of water, then mix in the raisin puree, orange zest and brown sugar.
5. Stir in the oil and the eggs.
6. Mix together the flour, baking powder, baking soda, salt and add to the wet ingredients. Stir until the ingredients are just combined, then add in the remaining 1/2 CUP of raisins.
7. Spoon the batter into muffin papers. Bake 25-30 minutes in a 350 degree oven.
