12-16 Pitted whole dates (Madjools are best, but can use any kind)
½ Cup finely Chopped Walnuts or Pecans
½ to ¾ Cup Sweetened Coconut Flakes

Directions:
Directions:
If dates are dry pop them in microwave for 15 seconds to soften. Put dates in food processor or blender and pulse until they make paste and start to form ball. If too dry add a few drops of water. Remove from blender and mix in nuts. Form ball and roll mixture into logs on wax paper, then roll logs in coconut flakes. Make logs any size you choose. Wrap in waxed paper and store in refrigerator.
