3 eggs, separated
1 (14 oz) can of eagle brand sweetened condensed milk
½ cup lime juice
2-3 drops of green food coloring (optional)
1 (9 in) unbaked pie crust
½ tsp cream of tartar
1/3 cup sugar
add some lime zest as well for flair

Preheat oven to 325. Beat egg yolks on low speed, gradually beat in SC milk and lime juice until smooth. Stir in food coloring (optional). Pour mix into crust. Bake 30 min. Remove from oven. Increase temperature to 350. Beat egg whites and cream of tartar on high speed until soft peaks form. Gradually beat in sugar on medium speed, 1 tbs at a time; beat 4 min longer or until sugar is dissolved and stiff, glossy peaks form. Immediately spread meringue over hot pie, carefully sealing to edge of crust to prevent meringue from shrinking. Bake 15 min. Cool 1 hour. Chill at least 3 hours. Store leftovers covered in fridge.

Pop loved key limes. He was always the one to squeeze the lemons and limes, though, and he didn’t really feel like key lime pie was worth the effort.
