4 eggs
1 can eagle brand sweet and condensed milk
1 can of Pet evaporated milk
1/3 cup light brown sugar
1 tsp almond extract (alternatively use vanilla)
almonds and/or coconut
¾ cup sugar
water

Preheat oven to 350. Use an 8”x8” pyrex. If you double recipe, go to a 9x11 or 9x13 pan. Caramelize ¾ cup of sugar with water in a pot and then pour into bottom of cake pan. Mix all the other ingredients in a blender and pour over the caramelized sugar bottom. Bake until just set. When baking, put the cake pan in a cookie sheet with 1-1.5” inches of water. When done, free edges with a knife and let cool before flipping out of the pan.

Eileen was our neighbor in McDade Estates after the Brocks moved away. Great Flan. She made this for the hospital staff during the years when I worked there, and all the times we would bring food I never got as much as I wanted because I had to stay with the patients. She was a nurse but is now director of the surgery department. She’s a little younger than me.   At the end of browning the sugar, put in a little water to the mix so that it is easier to get more of the caramel sauce out of the pan when you turn it out. Double the caramel sauce for special occasions.
