¾ cup sugar
1/3 cup flour
1/8 teaspoon salt
2 cup milk, scalded
½ tsp almond extract
½ tsp vanilla extract
2 tbs butter, salted
2 eggs well beaten
1+ cup of shredded coconut, Baker’s sweetened coconut (like ½ of a 12 oz bag)

Directions:

Combine butter, sugar, salt, flour and eggs in a saucepan. Add milk slowly, stirring constantly. Cook until thick and smooth. Add flavoring. Pour into baked pastry shell. Spread meringue topping over the top and bake until the meringue is a pretty brown color (15 min ish)

I got this recipe from Mother’s (Libby Linn Woolsey’s) recipe box. I don’t think she ever made it, though! I don’t know where she got the recipe… I’ve made this pie many times and this was Pop’s (Lloyd Bartely Dunaway’s) second favorite pie. Very easy!
