2-3 eggs
2-3 full sheets of matzoh
1 tablespoon of milk
1 tablespoon of butter or margarine
Salt and pepper

Scramble 2 eggs in a bowl along with 1 tablespoon of milk until the eggs are nice and fluffy.
Put the sheets of matzoh under running water for 20 to 60 seconds until they just begin to soften. Let it get soft, but don't let it get mushy. Shake off the excess matzoh and reserve the matzoh.
Melt a tablespoon of butter or margarine in a skillet or frying pan over medium heat.
Break the matzoh into bite-sized pieces and place them in the skillet.
Sauté the matzoh pieces for about a minute until they are evenly coated with butter.
Pour the scrambled eggs over the matzoh pieces.
Stir the eggs with a spatula until they are well-combined with the matzoh.
Cook the eggs for about two minutes over a medium flame, flipping and stirring occasionally. Don't let the eggs sit, or they will overcook. You want the eggs to be cooked soft, not runny. Overcooked or browned eggs will ruin the flavor entirely.
As you are cooking, sprinkle the salt and pepper to taste. You may also add sugar at this time, if you want the matzoh brei to have a sweeter taste.
Serve the matzoh brei immediately with a small side of apple sauce or sour cream.

Here's another Passover recipe you can use. My mom loved to make matzoh brei for us over Passover. I carried on the tradition and made it for Danny, as well.
