Candle Stick Salad

2 bananas
1 small can of pineapple rings
4 teaspoons Miracle Whip Mayo
4 Maraschino cherries (no stems)

Cut bananas in half and insert each half into 1 or 2 pineapple rings sticking straight up. Place a dollop of Mayo on top of the banana point to represent the melted wax and stick cherry on top for the flame. Makes 4 servings
 

Pear Salad

1 can of pear halves, chilled
3 bib lettuce leaves
6 tsp of Miracle Whip Mayo
6 tbs of grated "rat" cheese
6 Maraschino Cherries

Directions:
Directions:
Drain pears and place 2 halves on each bib lettuce leaf. Fill each pear center with Mayo and sprinkle with grated cheese. Top with a cherry. Refrigerate until ready to serve. Serves 3
 

Ambrosia for Uncle TC


Ingredients:

1 large can of crushed pineapple
4 navel oranges, peeled and sectioned
1 small bag of shredded coconut
10 Maraschino cherries, halved

Open can, peel and section oranges. Dump into a bowl with the shredded coconut and cherry halves. Mix and taste. If she didn't think it was sweet enough she would add a couple of teaspoons of sugar. My mother liked everything sweet, especially her tea.
Today things are more sophisticated so I have included our Thanksgiving Ambrosia from my catering business.






 

Thanksgiving Ambrosia


Ingredients:

2 (20 oz. ea.) cans pineapple tidbits, well drained
2 (15 oz. ea.) cans mandarin oranges, well drained
1 (10 oz. ea.) Jars maraschino cherries, well drained
1 (14 oz.) bag coconut flakes
5 oz. mini marshmallows
⅔ cup chopped pecans
4 oz. sour cream
16 oz. Cool Whip

Combine sour cream and Cool Whip. Fold in all other ingredients. Chill covered for at least 2 hours.

Note: Pineapple Tidbits are smaller than pineapple chunks. Tidbits work much better for this recipe.

I always felt special because my mother would make me her unique fruit salads. For my daddy she would make his favorite, Ambrosia. Not the fancy ones they make today but a very simple version.
In the Thanksgiving Ambrosia recipe they will add other fruits like sliced mango or papaya or even lychee fruit.
