1c raw apple -- grated
1c raw sweet potato -- grated
1c raw carrot -- grated
1c matzo meal
1/2 c pareve margarine -- melted
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1/2c sugar -- optional

Directions:

1. Preheat over to 325°. Grease a 10-inch casserole or muffin tins.

2. Mix all ingredients together well.

3. Pour into the baking dish. Cover with aluminum foil and bake 45 minutes. If using muffin tins, bake 30 minutes.

4. Raise oven to 350°, remove cover, and bake an additional 15 minutes. Slice and eat hot as a vegetable with meat.
