2 small onions -- minced
2 medium butternut squash (approx. 5 cups) -- peeled, seeded and cubed
4 c vegetable broth or chicken broth -- reduced-fat, reduced-sodium, (to cover squash)
1 tsp paprika
salt and pepper -- to taste

Directions:

Coat a large saucepan with the cooking spray. Add the onions and cook for about 5 minutes until soft.

Add the squash, stock, and paprika and bring to a boil. Lower the heat to low, cover the pan, and simmer for about 35 minutes until all the vegetables are soft.

Take pot off of the heat and process until smooth. Season with salt and pepper and reheat slowly.
