2 1/2 cups Warm Milk
2 pkgs Dry Yeast
3-4 Beaten Eggs
6 1/2 cups Flour
Pinch of Salt
1 Stick (4 T) Butter
2 tsp Crushed Cardamon Seed
1 1/2 cups Sugar
Pearl Sugar for Top

1. Warm milk and set aside 2 cups, use the remaining 1/2 cup to dissolve yeast. (Be careful it's not too hot or it will kill the yeast.)
2. Mix salt, sugar and cardamon thoroughly and add remaining milk, eggs, and 1 1/2 cups flour. Place in previously warmed oven(about 3 minutes) that has been turned off and place in oven for 15 minutes.
3. Remove from oven and mix 5 cups of flour stirring thoroughly to obtain a smooth mixture. USE A WOODEN SPOON
4. Slice a sick of butter and place over the mixture, then place in the oven for 10 minutes.After 10 minutes, stir butter into mixture and place back into warm oven for 30 minutes. IT WILL DOUBLE IN SIZE
5. Prepare hard surface with a dusting of flour. Pour mixture from oven on hard surface. Knead constantly for 8 minutes being careful not to add too much flour. You will fold the mixture onto itself, and fold it toward you. It should be smooth and light, work air bubbles out of mixture.
6. Divide into 4-5 pieces and the dived each of those pieces int 3 pieces so that you can braid the loaves.
7. Roll out the 3 pieces for each loaf into 10" ropes and proceed to braid.(To make rolls, instead of dividing the larger pieces into 3, divide into 10-12 pieces. Roll into rope and tie a knot.)
8. Place on greased cookie sheet.
9. Paint the pastry with egg using a brush and sprinkle with Pearl Sugar. You can also ad slivered almond or candied fruit.
10. Let rise in a warm place for 30 minutes, the pastry will double in size.
11. Place into 350º oven until done, it will spring back after gentle touching. Be careful not to burn the bottom.
