1 Cup Uncooked Rice
1 Cup Frozen Corn Kernels, thawed
1 Can (15 ounce) Black Beans, drained and rinsed
1 Jar Salsa
1 Cup Chicken Broth
1/2 Tablespoon Chili Powder
1/2 teaspoon Oregano
2 Large Chicken Breasts (1.5 pounds)
1 Cup Shredded Cheddar Cheese

Directions:

--Preheat Oven to 375º

--In 8" X 8" casserole dish
--Mix rice, beans, corn, salsa, broth, chili powder and oregano until combined.
--Cut chicken breasts into 3 pieces each and lay onto of rice mixture in casserole dish.
--Cover casserole with foil.

--Bake 1 Hour.
--Test rice to see if it is done, if not recover and cook 10-15 minutes more.
--When rice is done, remove foil.
--Top with cheese and return to oven for 5 minutes until cheese is melted.
