Ingredients:

1/4 oil (I used Corn Oil)
2 Yellow Onions
3 Carrots peeled and sliced
2 Celery Stalks chopped
4 Baking potatoes peeled and cut into 1/2" cubes
5 Jalapenos remove seeds and veins, chopped fine
1/3 cup stone ground mustard
1 longneck bottle of Bock Beer (Shiner or Ziegenbock)
2 quarts chicken stock
4 cups of cheddar (more cheese...always MORE cheese. never too much cheese)
Sea Salt to taste
Fresh Pepper to taste
1 cup whipping cream

Directions:
Directions:
1.) Heat the oil in a large pot (6 quart) over medium heat
1a.) DRINK A BEER
2.) add onions, carrots, celery, and potatoes
3.) cook stiring occasionally... about 8 minutes
3a.) DRINK A BEER
4.) Add Jalapenos, mustard, Beer, And Chicken Stock
5.) Stir to blend well, cover and simmer, about 30 minutes

(!!!!!!make bacon now!!!!!!)

5a.) DRINK A BEER
6.) Puree soup or leave it chunky..... whichever I don't care
7.) Return pot to medium heat and stir in cheese
8.) Add salt and pepper to taste
9.) Add whipping cream and heat (DO NOT ALLOW TO BOIL)
10.) Add galic croutons
11.)Drink last Beer with a hot bowl of soup and bacon

Found this soup by accident. It's the bee's knees! Of course after a six pack of cold beer a person will eat anything (see slimjims or pickeled pigs feet....yuck!)
