3-4 lb. chicken, cut into pieces
4-5 Yukon gold potatoes, scrubbed and cut into medium chunks
6-8 Italian tomatoes, cut into medium chunks
1 large onion, cut into medium chunks
1/3 c. olive oil
1/4 c. fresh oregano leaves (or 2 T. dried)
1 tsp. salt
Pepper to taste

Directions:
Combine chicken, potatoes, tomatoes and onion in a large roasting pan; add olive oil, oregano, salt and pepper and toss until coated. Place chicken pieces on top of vegetables and roast, uncovered, at 425 F. for 45-60 minutes.
