1 envelope of unflavored gelatine

1/4 c cold water

1 can 16 oz lite peaches drained (reserve liquid)

8 oz cream cheese (light or fat-free)

1/4 c sugar

Directions:
Directions:
1. In blender sprinkle unflavored gelatine over water, let stand 2 min.
2. In a small saucepan bring juice to boil.
3. Add juice to blender & process @ low until gelatine is completely dissolved, about 2 min.
4. Add remaining ingredients & process on high until blended.
5. Pour into 8 or 9-inch pie plate with a crust of 3/4 c graham crackers & 2 tbsp melted butter.
6. Chill until firm or about 3 hours.
7. Garnish with peaches.
