For Casserole:
1 Whole Cooked Chicken, bones removed, meat diced or shredded
(Rotisserie Chicken works awesome) should have 5-6 cups of chicken
1/2 Pound thinly sliced Deli Ham, roughly chopped
1/4 Pound thinly sliced Swiss Cheese, cut in strips

For Sauce:
4 Tablespoons Butter
4 Tablespoons Flour
3 1/4 Cups Milk (Whole or 2% works best)
2 Tablespoons Lemon Juice
1 Tablespoon Dijon Mustard
1 1/2 teaspoon Salt
1/2 teaspoon Paprika
1/4 teaspoon Pepper

For Topping:
6 Tablespoons Butter
1 1/2 Cups Panko Bread Crumbs
1 1/2 teaspoon Crushed Parsley
Salt and Pepper to taste

--Preheat Oven to 350º

--Butter 9" X 13" baking dish.
--Put shredded chicken in bottom of baking dish.
--Scatter rough chopped ham on top of chicken.
--Lay Swiss cheese over ham.

--To Make Sauce: Melt butter in large sauce pan over medium heat.
--When butter is melted, stir in flour to form a smooth roux. Do not brown.
--When roux is smooth and bubbly, slowly add milk, constantly stirring briskly.
--Cook stirring constantly to make a thick sauce.
--Stir in lemon juice, mustard, salt, paprika and pepper.
--Bring sauce just back to a boil and turn off heat.
--Pour over cheese in casserole dish, being certain to get over all edges.

--To Make Topping:
--Melt Butter in microwave for 30 seconds.
--Stir in crumbs, parsley, salt and pepper.
--Sprinkle over top of Casserole.

--Bake for 45 minutes.
