2 Zucchini 6-7 inches long
1/4 Pound Ground Beef
1 Slice Whole Grain Bread, crumbled
1 teaspoon Minced Onion
2 teaspoon Parsley Flakes
1/8 teaspoon Garlic Powder
1/8 teaspoon Red Hot Pepper Sauce (optional)
1 Egg
1/2 Cup Shredded Cheddar Cheese, divided
3 Tablespoons Grated Parmesan Cheese, divided
1 Can (15 ounce) Diced Tomatoes

Directions:
Directions:
--Preheat Oven to 350º
--Wash and trim ends of zucchini. Cut lengthwise.
--Scoop out inside, leaving a boat. Save the insides too.
--Microwave zucchini boats upside down on plate covered with plastic wrap for 2 minutes each.
--Cook beef until browned; drain grease.
--In large bowl; mix meat, zucchini insides, and bread crumbs.
--Add in onion, parsley, garlic powder, egg and hot sauce.
--Mix in half of cheeses.
--Fill boats and place in baking dish.
--Sprinkle with remaining cheeses.

--Bake for 30-45 minutes until heated through and zucchini is tender.
(Recipe is easily multiplied.)
