1 Med. Eggplant - 2 for larger size
1 Cup Flour
Olive Oil
Grated Romano Cheese
1/2 Lb. Mozzarella Cheese

Seprate Pan
Marinara Sauce - Cook Olive Oil, Garlic, fresh parsley, basil, oregano, sugar, tomatoes sauce. 1/2 hr. cook

Wash eggplant slice 1/4 '' think slices
In bowl mix together - flour, salt, pepper,
Then Dip into egg and then fry in hot Olive oil until lightly brown
Cover the bottom of casserole dish with Marinara sauce

LAYERS
eggplant, Romano cheese, Mozz Cheese, Mariana sauce until all eggplant is used then top with sauce
Bake 350 º degrees
30 min or longer
