5 ears of fresh corn
1/2 c. red onion, diced
3 T. cider vinegar
3 T. olive oil
1 tsp. salt
Fresh pepper to taste
1/2 c. basil leaves, chopped

Directions:
Directions:
Cook corn is a large pot of boiling salted water for 2-3 minutes; drain and put corn in a large bowl of ice water. When cooled, cut kernels from cob.

Mix corn in bowl with red onion, vinegar, olive oil, salt and pepper. Just before serving toss in fresh chopped basil leaves and adjust seasoning to taste.
