Ingredients: 4 bone- center-cut pork chops 1 large Gala or Granny Smith Apple, halved, cored and sliced thinly 2 tablespoons extra-virgin olive oil or vegetable oil 1 large white onion, sliced ⅔ cup barbecue sauce Coarse salt and freshly ground black pepper

Directions:OVEN METHOD: Preheat the oven to 375º. Heat oil in a large skillet over medium-high heat. Season pork chops with pepper and cook, flipping once, until golden brown. (2-3 min per side). Arrange pork chops on top of onions and apples. Pour half of the barbecue sauce over the top. Place in oven at 375º for 15 minutes. Pour remainder of barbecue sauce onto pork chops and cook for another 15 minutes.
SKILLET METHOD: Sprinkle pork with salt and pepper. Cook in hot oil in a 12-inch cast-iron skillet over medium heat 5 to 6 minutes on each side or until golden brown. Remove from skillet. Add apples and onion to skillet; cook, stirring occasionally, 4 to 5 minutes or until browned. Remove from skillet. Arrange pork chops on top of apples and onions. Pour half of barbecue sauce over the top. Cover with low heat for 5-10 minutes depending on thickness of pork chop. |
