1 whole chicken
1 lb. carrots, sliced into 1/2-inch coins
5 stalks celery, chopped 1/2 inch thick
1 large onion, chopped
2 tbsp. chopped parsley
2 tbsp fresh thyme

Directions:
Directions:
1) In a large pot, place carrots, celery, onion. Season generously with salt and pepper
and add fresh thyme. Add the chicken, backbone-side up. Add water to cover.
2) Bring to a boil, then reduce to simmer, and cook partially covered until chicken is done, about an hour.
Skim off foam and discard
3) Remove chicken from pot, let stand until cool. Remove meat from bones, shred into bite-size pieces and return to pot.
Cook until heated through. Season with more salt and pepper and garnish with parsley.

I personally don't make the soup with thyme. If you use a larger chicken, you can always freeze the rest.
