2 cans (15¾ ozs each) sweet potatoes, drained and mashed
½ cup sugar
1 egg
¼ cup butter, melted
½ tsp. ground cinnamon
Dash salt

TOPPING:
1 cup coarsely crushed butter-flavored crackers (about 25 crackers)
½ cup packed brown sugar
¼ cup butter, melted

Directions:
Directions:
Preheat oven to 350 degrees. In a large bowl, combine first six ingredients. Transfer to a greased 8-inch square baking dish. Combine topping ingredients, sprinkle over sweet potato mixture.
Bake. uncovered, 20-25 minutes or until a thermometer reads 160 degrees.

I have used my home grown sweet potatoes and cooked them then mashed them up. Tastes even better than store bought just not quite as quick as opening a can. The crackers make them extra special and it is very sweet and yummy!
