4 shallots or 1 small onion, chopped
6 whole scallions, sliced
1 1/2 T chopped fresh ginger or 1/2 t. powdered
12 cloves garlic, minced
3/4 cup peanut oil
2 lbs shrimp, shelled and deveined
3 cups coarsely shredded cabbage
2 cups coarsely shredded Chinese cabbage
2 cups eggplant, peeled and cubed
2 cups sliced zucchini
1 green pepper, chopped
1 bay leaf
1 T salt
1 t. cayenne
3/4 cup coconut milk
2 t. arrowroot or cornstarch
2 T water

Directions:
Directions:
Cook shallots, scallions, ginger and garlic in half the peanut oil for 5 minutes or until they are soft and wilted. Add shrimp and continue cooking on high heat until the shrimp turn pink, stirring constantly. Remove shrimp to a platter. Add remaining oil to pan. Cook cabbages, eggplant, zucchini, and green pepper for 5 minutes, stirring constantly. Add seasonings and coconut milk. Cover pan and simmer 5 minutes or until vegetables are barely tender. Return shrimp to pan, cook 5 minutes longer. Mix arrowroot or cornstarch with water. Stir into simmering stew. When thickened, serve immediately.
