100 grms de manteca inca
1/2 taza de azucar
4 yemas de huevo
13/4 de maizena
1 cáscara de limón
1/2 taza de harina
1 cucharadita de royal
1 lata de cajeta de leche nestlé
coco rayado al gusto

Se bate la mantequilla con el azucar hasta que este cremosa, se agragn las 4 yemas y se sigue batiendo, se le añade la raspadura de limón.

Mezcla la maizena junto la harina y el royal, y se le añade a la pasta anterior, hasta formar una masa suave.

Se extiende la masa a 1/2 cm de espesor, se cortan en ruedas (el tamaño es al gusto),

Se colocan en una charola para hornear no muy pegadas, y se hornean 20 min, a horno suave.

Una ves que ya estan listas las galletas, se unta con la cajeta a formar un sandwich, ya que estan listas, se le unta alrededor y se pasa por el coco rayado. Y listooooo

Mi mamá hizo estas galletas en la primera comunion de todos mis hermanos, en la boda de la Pilla, y las hacia de ves en cuando en navidad, a mi me encantan, son mis galletas preferidas por eso se las comparto.. Son laboriosas pero vale la pena hacerlas y disfrutarlas, son una delicia.

Las acompañas con un rico café.
