• Medium head of cabbage shredded
• 3 carrots grated
• Mayonnaise
• 1 T sugar
• Pinch of salt
• 1 T vinegar
• Fresh ground black pepper

Directions:
Directions:
• In a large bowl, mix the cabbage and carrots
• Add Mayonnaise ¼ cup at a time. You will probably use ¾ cup. The vegetables should be just wet, but not runny.
• Add salt, sugar, vinegar, and pepper
• Mix well

Now it gets personal. Above is Grandma Edna’s pure recipe.
o If you like more tartness, add a more vinegar. I like to use half apple cider vinegar and half white vinegar, 1.5 T each
o If you like a spicy coleslaw, chop some jalapenos. @ 2 T is what I use. Use the ones in a jar and add a little jalapeno juice (1 T) for a little kick.
o Sometimes I put in a few shakes of my Eastern Carolina BBQ Sauce (recipe is in the Sauce section)
o Sugar is another thing you might add if you like more sweetness.
o Add more mayonnaise if you like it creamier.

Grandma Edna’s coleslaw was the ONLY one I liked as a kid. I love slaw on chili dogs and pulled pork sandwiches.
