1 Can or tube almond paste
5 eggs separated
1 cup sugar
3 sticks of butter unsalted
2 cups flour
¼ tsp salt
6 ounces chocolate – semi sweet chips or squares of baking chocolate
1 tsp almond extract and green and red food coloring
1 Jar of raspberry preserves or apricot preserves, seedless (or strain out the seeds)

With mixer, cream sugar, butter, almond extract, egg yolk. Cut up almond past and add in.
In separate bowl mix flour and salt. Add into mixture, slowly.
Beat egg whites until stiff and add to mixture.
Separate the mixture into three portions, approx. 1 and ½ cups to each.
Add 10 drops of red to one batch and another green.
Spray with pam 8 x 10 inch baking tins and then line with wax paper. Spread one batch per tin, if you are using the same pan, bake each color individually.
Bake at 375 for 10-12 minutes, until light brown on ends start to form. Cool the tins of cake. While cooling in small pot heat of preserves stirring and let cool for a few minutes.
Spread half the preserves on yellow (plain sheet of cake and another on red sheet.
Place the yellow sheet on top of the red then the top layer the green.
Put one of the used wax papers on top of the cake and take heavy items such as books and place on top to press for several hours or overnights.
Melt chocolate when ready to frost and uncover wax paper and spread evenly. Allow to harden then cut up into 1 ½ inch bars or squares, whichever you prefer.
