1 pound asparagus, trimmed and cut into 1 inch pieces
3-4 slices bacon, cut into 1 inch pieces
1 leek, shallot, or small onion, thinly sliced
1 tablespoon butter
1/2 cup milk, warm
3 large eggs, room temperature
1/2 cup flour
salt and pepper to taste
1 cup Gruyere or cheese of your choice, shredded

Fill a pan with 3 inches of water and place trimmed ends in the water. Insert a steamer basket and add the asparagus pieces. Cook over high heat until the pieces are bright green.

In and oven-proof pan, saute the bacon. When crisp, remove the pieces, and add the butter and sliced leek. Saute until wilted.

Mix milk, eggs, flour, salt and pepper. When onions are done, turn off the heat and add the bacon and asparagus pieces. Mix well and then cover with the egg mixture. Distribute cheese evenly on top.

Bake at 425F/220C until puffed and golden, about 20 minutes.
