4 onions, chopped
1 1/4 tsp pepper
1/2 cup oil
4 garlic cloves, minced
12 cups chopped peeled fresh tomatoes
3 bay leaves
4 tsp salt
2 tsp dried oregano
1/2 tsp dried basil
2 6-oz cans tomato paste
1/3 cup brown sugar

Directions:
Directions:
In a large pot, sauté onions and pepper in oil til onions are tender. Add garlic, tomatoes, bay leaves, salt, oregano and basil. Simmer for 2 hours stirring occasionally. Add tomato paste and brown sugar; simmer one more hour. Remove bay leaves. Serve over pasta. This recipe yields 2 quarts and freezes well. Ground beef can be added.
