6 lb. young carrots
2 T. pickling spice
1/2 c. salt
2 c. cider vinegar
12 large sprigs dill
garlic cloves
6 c. water

Directions:
Directions:
Scrape carrots and cut into sticks.

Put dill in each jar as well as a clove or 2 of garlic. Pack carrots in jar standing up. Top each jar with some more dill and another clove of garlic. Add 1 tsp. pickling spice. Bring salt, vinegar and water to a boil and pour over carrots, filling jar completely to top.

Cover and seal immediately. Let stand at least 2 weeks before using.

Makes 6 quarts.

When Kathy made these in the summer of 2016 (and they were amazing) she used organic baby carrots in place of peeling and slicing larger carrots. If you are using smaller jars, just adjust the pickling spice accordingly.
