1 1/2 c. brown sugar
1 egg
1 c. butter or shortening
3/4 cup coconut
1 tsp. vanilla
1 tsp. baking powder
1 1/2 c. flour
1 1/2 c. rolled oats
1 tsp. baking soda

Directions:
Directions:
Cream butter; add sugar and egg. Mix well.

Add dry ingredients and mix with your hands. (I use my mixer)

Drop onto greased cookie sheet (or parchment lined sheet). Bake at 350 degrees for 10 to 15 minutes.

A nice oatmeal cookie. Taken from 2 separate recipes in the Beller Family Cookbook and tweaking it to combine the two to come up with this recipe.
